  • MARINADE

    lemon juice

    ginger

    cloves garlic, crushed
  • salt and freshly ground black pepper to taste

    chilli, seeded and chopped

    soy sauce
  • 5
    ml
    Worcestershire sauce

    large onion, grated
  • 5

    braai spice
  • 2

    chicken spice
  • 500
    g
    skinned and deboned chicken breasts, cut into 25 x 25 mm cubes

    dried breadcrumbs
  • 125
    ml
    sesame seeds (optional)

    eggs, whisked
  • 125
    ml
    cake flour
  • oil for frying
 

Method

 
Blend all the ingredients for the marinade and marinate the chicken cubes overnight. Combine the breadcrumbs and sesame seeds. Place the eggs, flour and breadcrumb mixture in three separate shallow bowls. Dip the chicken cubes in the flour, then the egg and finally in the crumbs. Chill for 30 minutes. Heat enough oil for shallow frying (about 3 mm deep) in a large frying pan and fry the chicken nuggets until golden brown on both sides and cooked inside. Serve with lemon wedges, rice and chutney. Serves 2-3.
