    oil
  • 1
    small onion, finely chopped

    cloves garlic, crushed
  • 2
    fresh chillies, finely chopped

    chunky peanut butter
  • 410

    coconut milk
  • 30

    vinegar

    brown sugar

    soy sauce

    sesame seeds, toasted

    dried egg noodles

    chicken breast fillets, cut into small cubes

    spring onions, thinly sliced
 

Method

Heat the oil in a saucepan and sauté;é the onion, garlic and chillies. Add the peanut butter and cook for 30 seconds, then gradually add the coconut milk. Stir in the vinegar, sugar, soy sauce and sesame seeds and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes. Cook the noodles according to packet instructions and drain. While noodles are cooking, bring the sauce back to the boil and add chicken. Boil for 2 minutes, or until chicken pieces are just cooked. Add the spring onion and the sauce to the drained noodles Mix and serve immediately. Serves 4.
