Ingredients (11)

240 g pasta — macaroni, uncooked
4 chicken breast fillets — cooked, shredded
60 g butter
½ cup flour
4 cup milk
1 cup grated mature cheddar
nutmeg — ground, pinch
1 cup cheddar cheese — grated
4 bread — sliced
3/4 cup parmesan cheese — grated, for crumble
salt and freshly ground black pepper — to taste

Method:

Preheat oven to 180ºC

Boil the pasta in salted water and set aside.

Melt the butter in a medium sized saucepan.  Remove from heat and add the flour, mixing it to make a paste. Add half of the milk, and whisk until incorporated.

Tip: When adding the milk, rather add in smaller amounts to avoid lumps.
  
Return the pot to medium heat and whisk until sauce thickens. 

Add the rest of the milk, whisking continuously allowing the sauce to thicken and boil. Remove from heat, add the cheese and nutmeg and season to taste.
   
Add the macaroni, chicken and cheese sauce together in an oven-proof dish. Top with grated cheese, breadcrumbs and Parmesan.
   
Bake until golden for approximately 30 minutes.
