Chicken livers with raisins and cashew nuts

    olive oil
  • 2
    medium onions, peeled and quartered
  • 250

    chicken livers, trimmed
  • 125
    ml
    seedless raisins
  • 250
    ml
    red wine
  • 100
    g
    cashew nuts
  • salt and milled black pepper
  • 300
    g
    orzo (rice-shaped pasta), cooked
  • rocket, to serve
  • 2
    bulbs garlic, roasted, to serve (see tips)
 

Method

 
Heat olive oil in a frying pan, add onions and sauté until softened. Add chicken livers and stir-fry for 2 minutes, then add raisins and wine. Cook for a further 3 minutes, add cashew nuts and season to taste. Toss with orzo and spoon onto a bed of rocket. Remove garlic cloves from skins and use to garnish dish. Serve hot as a starter or main meal.
