Chicken livers with avocado

    large onion, thinly sliced
  • 1
    clove garlic, crushed (optional)
  • oil and butter
  • 500
    g
    chicken livers, cleaned
  • 3
    lemons, grated rind and juice
  • salt and black pepper
  • 2
    ripe, but firm avocados, thinly sliced
  • few lettuce leaves
 

Method

 
In a pan, sauté the onion and garlic in a mixture of heated butter and oil until soft. Remove from the pan and fry the chicken livers in extra oil and butter until brown on the outside but stilll slightly pink inside. Add the onion mixture and the juice and rind of the lemons (you as much as you need). Add extra butter to ensure a generous sauce is formed. Heat until warmed through. Season to taste with salt and pepper. Serve on attractive plates and decorate with the avocado slices and lettuce leaves. Serve immediately. Sereves 4-6.
