Ingredients (11)

50.00 g butter
500.00 g chicken livers — cleaned
1.00 onion — sliced
2.00 garlic — cloves, crushed
1.00 tomatoes — ripe, skinned and diced
30.00 ml tomato purée
5.00 ml oregano
black pepper — freshly ground
75.00 ml wine — red
100.00 ml water
10.00 ml brown sugar

Method:

Heat the butter in a pan and sauté the chicken livers until brown on the outside, but still pink inside. Set aside.
Sauté the onion and garlic until soft.
Add the diced tomato, tomato purée and origanum. Season to taste with black pepper. Simmer for one minute.
Add the red wine, water, brown sugar and livers.
Simmer for another 20 minutes.
Serve on toast.
