Chicken liver surprise

    butter
  • 500
    g
    chicken livers, cleaned
  • 1
    onion, sliced
  • 2
    cloves garlic, crushed
  • 1
    ripe tomato, skinned and diced
  • 30
    ml
    tomato purée
  • 5
    ml
    origanum
  • freshly ground black pepper
  • 75
    ml
    red wine
  • 100
    ml
    water
  • 10
    ml
    brown sugar
 

Method

 
Heat the butter in a pan and sauté the chicken livers until brown on the outside, but still pink inside. Set aside. Sauté the onion and garlic until soft. Add the diced tomato, tomato purée and origanum. Season to taste with black pepper. Simmer for one minute. Add the red wine, water, brown sugar and livers. Simmer for another 20 minutes. Serve on toast.
