Chicken liver salad

    g
    chicken livers, cleaned
  • salt and freshly ground black pepper
  • oil
  • 10
    ml
    balsamic vinegar
  • 200
    g
    assorted lettuce leaves
  • 250
    g
    fresh button mushrooms, sliced
  • 20
    cherry tomatoes
  • 2
    avocados, stoned, peeled and sliced into strips
  • SALAD DRESSING
  • 45
    ml
    olive oil
  • 15
    ml
    lemon juice
  • 5
    ml
    Dijon mustard
 

Method

 
Season the livers to taste with salt and pepper and fry in a little oil until golden brown on the outside but still slightly pink inside. Remove from the pan and set aside. Add the vinegar to the pan juices left behind in the pan and simmer for a few minutes. Pour over the liver. Arrange the lettuce leaves on a large salad platter. Top with the mushrooms, cherry tomatoes, avocado strips and chicken livers. Blend the olive oil, lemon juice and mustard. Season with salt and black pepper to taste. Pour the salad dressing over the salad. Serve immediately. Serves 6-8.
