Ingredients (10)

20.00 ml sunflower oil
30.00 ml fresh coriander — chopped
30.00 ml lemon juice
50.00 ml almonds — slivered, toasted
5.00 ml cornflour
250.00 ml yoghurt — natural
2.00 garlic — cloves, crushed
20.00 ml curry powder — medium
6.00 chicken breast fillets — cubed
1.00 onion — medium, sliced

Method:

1. Heat oil in a saucepan and sauté onion until soft. Add garlic and curry powder and cook for one minute.
2. Mix the cornflour into the yoghurt and add to the saucepan. Stir in 50 ml water and heat until simmering gently.
3. Add chicken and simmer for five minutes until chicken is cooked through. Stir in lemon juice and coriander. Season to taste with salt and serve sprinkled with toasted almonds.
