Ingredients (10)

8.00 chicken breast fillets
salt and freshly ground black pepper
1.00 onion — large, sliced
3.00 garlic — cloves, crushed
60.00 ml chutney — mango or peach
40.00 ml tomato sauce
15.00 ml Worcestershire sauce
10.00 ml curry powder
7.00 ml french mustard
cayenne pepper

Method:

Season chicken well and place in a oiled casserole dish. Cover with onion slices and sprinkle garlic over. Mix remaining ingredients together and pour over chicken.
Bake, uncovered, in a preheated 180 ºC oven for 20 minutes. Dot each breast with 2-5 ml (1/2-1 tsp) butter and bake for a further 20 minutes.
Dot with same quantity of butter, cover, reduce heat to 120 ºC and bake for a further 10 minutes, or until done.
