Chicken kebabs with tomato sauce

    ml
    olive oil
  • 60
    ml
    lemon juice
  • 4
    red chillies, seeded and chopped
  • 500
    g
    chicken breast fillets, cut into thin strips
  • TOMATO SAUCE
  • 410
    g
    canned chopped tomatoes
  • 60
    ml
    sherry
  • salt and pepper
  • brown sugar and honey
  • 15
    ml
    crushed dried chillies (or more to taste)
  • TO FINISH
  • 200
    g
    cooked baby potatoes, halved
  • salt and pepper
 

Method

 
Blend the oil, lemon juice and chillies and marinate the chicken strips in the mixture for about one hour.
TOMATO SAUCE
Meanwhile, bring the tomatoes and sherry to the boil.
Season to taste with salt, pepper, sugar and honey.
Add the chillies and simmer until the sauce has reduced and is glossy. Cool
TO FINISH:
Thread the chicken strips onto the skewers, alternating with potato halves.
Season with salt and pepper.
Preheat the oven grill and brown the kebabs on both sides until golden and done, basting frequently with the marinade.
Serve with the tomato sauce.
