Chicken kebabs with egg noodles

Ingredients

    soy sauce
  • 30
    ml
    tomato purée
  • 25
    ml
    honey
  • 25
    ml
    sherry
  • 5
    ml
    fresh thyme leaves
  • 100
    ml
    vegetable stock
  • 450
    g
    chicken breast fillets, cut into long strips
  • 250
    g
    egg noodles
  • bunch of spinach leaves, torn into small pieces
  • 100
    g
    mangetout, halved
 

Method

Combine the soy, tomato purée, honey sherry and thyme. Thread the chicken onto the wooden skewers and coat with half the mixture. Grill under a preheated grill for about 6 minutes until golden, basting with the sauce. Add the remaining sauce to the vegetable stock. Cook the noodles in boiling salted water as per packet instructions. During the last 2 minutes add the spinach and mangetout. Drain. Bring the stock mixture to the boil and simmer for 1 minute. Pour over the noodles and divide into 4 bowls. Serve the kebabs on top.
