Chicken kebabs with egg noodles

Ingredients (10)

45.00 ml soy sauce
30.00 ml tomato purée
25.00 ml honey
25.00 ml sherry
5.00 ml fresh thyme
100.00 ml stock — vegetable
450.00 g chicken breast fillets — strips
250.00 g noodles — egg
spinach — torn
100.00 g mangetout — halved

Method:

Combine the soy, tomato purée, honey sherry and thyme.
Thread the chicken onto the wooden skewers and coat with half the mixture. Grill under a preheated grill for about 6 minutes until golden, basting with the sauce. Add the remaining sauce to the vegetable stock.
Cook the noodles in boiling salted water as per packet instructions. During the last 2 minutes add the spinach and mangetout. Drain.
Bring the stock mixture to the boil and simmer for 1 minute. Pour over the noodles and divide into 4 bowls. Serve the kebabs on top.
