Chicken in vegetable sauce

    oil
  • 250

    fresh button mushrooms
  • 500
    g
    Mediterranean vegetable selection
  • 4
    chicken breast fillets, cut into bite-sized pieces
  • 410
    g
    red wine and herb cook-in-sauce
  • 15
    ml
    chopped chives
  • 15
    ml
    chopped fresh parsley
  • 3
    ml
    turmeric
  • salt and freshly ground black pepper
 

Method

 
1. Heat oil and sauté mushrooms until soft. Remove and set aside. 2. Add chicken, in batches, and brown. Add cook-in-sauce, bring to the boil, cover and simmer for 20 minutes or until chicken is tender. 3. Return mushrooms to pan and add chives, parsley and turmeric. Season and simmer for a further 5 minutes to heat through.
