Chicken in tomato sauce

    large onion, finely chopped

    tomato sauce

    Worcestershire sauce
  • 15

    soft brown sugar
  • 5

    mustard powder

    kg
    chicken pieces
  • salt and freshly ground black pepper
 

Method

 
In a deep, microwaveproof dish, microwave the onion and oil, uncovered, for 5 minutes on 100 per cent power. Stir well after 2½ minutes. Add the tomato sauce, Worcestershire sauce, brown sugar and mustard powder and mix well. Season the chicken pieces with salt and pepper and arrange in a round microwaveproof dish with the thicker parts facing outward. Pour over the sauce, cover with paper towelling and microwave for 24 minutes on 100 per cent power. Turn the chicken pieces every 8 minutes, ensuring that the thicker parts face outward. Baste the chicken pieces every time you turn them. Serve hot with vegetables.
