Chicken in orange and sultana sauce

    cake flour

    ml
    cinnamon
  • 2
    ml
    ground ginger
  • 30

    brown sugar
  • 500
    ml
    orange juice
  • 75
    g
    raisins
  • 75
    g
    almond slivers
  • 1
    orange, cut into segments
 

Method

 
Season the chicken to taste with salt and pepper and brown in a little oil. Remove from the pan and set aside. Add the cake flour, cinnamon, ginger and brown sugar to the fat in the pan and mix to form a smooth paste. Add the orange juice and bring to the boil while stirring continuously. Add the raisins, almonds and chicken pieces and simmer until chicken is done. Add the orange segments and serve with rice. Serves 6.
