Chicken in cherry tomato dressing

    garlic cloves, crushed

    castor sugar

    balsamic vinegar
  • 250

    cherry tomatoes, halved
  • salt and milled black pepper
  • 150
    ml
    milk
  • 50
    g
    butter
  • 1
    bunch spring onions, finely sliced
  • 500
    g
    potatoes, peeled and cooked
  • 45
    ml
    wholegrain mustard
  • 30
    ml
    olive oil
  • 8
    chicken thighs
 

Method

 
Mix garlic, sugar and vinegar in a bowl. Add tomatoes and seasoning. Set aside. Place milk, butter and spring onions in a saucepan, bring to boil, then set aside for 15 minutes. Mash potatoes, then beat in milk mixture and mustard. Heat oil in a frying pan, add chicken and fry until done at centre. Add tomato mixture to pan and cook for 2 minutes. Serve chicken thighs on top of mash and spoon juices over.
