Chicken hotpot with beans

    olive oil
  • 1
    clove garlic, chopped
  • 6
    chicken breast fillets
  • salt and milled pepper
  • 1
    onion, peeled and sliced
  • 30

    red wine vinegar
  • 200
    g
    fresh mushrooms, wiped and halved
  • 2
    bay leaves
  • 500
    ml
    chicken stock
  • 15
    ml
    Worcestershire sauce
  • 410
    g
    red kidney beans, drained
  • 410
    g
    butter beans, drained
 

Method

 
Heat oil in a deep frying pan. Fry garlic until golden and add chicken breasts. Season and cook for 5 minutes on each side, or until golden brown. Add onion and red wine vinegar and cook for another 5 minutes. Add mushrooms, bay leaves, chicken stock and Worcestershire sauce. Simmer for 5 minutes, then stir in beans. Heat through. Serve with baby potatoes and vegetables of your choice.
