Chicken fajitas

    skinless, boneless chicken breasts
  • 1
    Finely grated rind and juice of 2 limes
  • 30
    brown sugar

    dried oregano
  • 3
    cayenne pepper
  • 5
    ground coriander
  • 2
    onions, thinly sliced
  • 3
    peppers (red, yellow and green), thinly sliced
  • 1
    Mexican tortillas
  • 100
    Guacamole, salsa or soured cream


1. Slice chicken into 2cm-wide strips and place in a large bowl. Add lime rind and juice, sugar, oregano, cayenne and coriander. Mix thoroughly and set aside to marinate for at least 30 minutes.
2. Heat oil in a large frying pan. Stir-fry onions and peppers for 5 minutes.
3. Add chicken strips and cook for about 15 minutes, until chicken is cooked through and vegetables are tender.
4. Spoon chicken onto a serving bowl and take it to the table with warmed tortillas, guacamole, tomato salsa and soured cream.
5. To serve: Each guest takes a warm tortilla, spreads it with a little salsa and adds a dollop of soured cream. The tortilla is then folded over the filling and eaten with the hands.
