Ingredients (10)

3.00 chicken breast fillets — skinned, deboned
1.00 lime — zest and juice
30.00 ml brown sugar
10.00 ml dried oregano
3.00 ml cayenne pepper
5.00 ml coriander — ground
2.00 onions — thinly sliced
3.00 peppers — thinly sliced
1.00 pkt tortillas — Mexican
100.00 ml guacamole

Method:

1. Slice chicken into 2cm-wide strips and place
in a large bowl. Add lime rind and juice, sugar, oregano,
cayenne and coriander. Mix thoroughly and set aside to
marinate for at least 30 minutes.
2. Heat oil in a large frying pan. Stir-fry onions and peppers
for 5 minutes.
3. Add chicken strips and cook for about 15 minutes, until
chicken is cooked through and vegetables are tender.

4. Spoon chicken onto a serving bowl and take it to the
table with warmed tortillas, guacamole, tomato salsa and
soured cream.
5. To serve: Each guest takes a warm tortilla, spreads
it with a little salsa and adds a dollop of soured cream.
The tortilla is then folded over the filling and eaten with
the hands.
