Chicken drummies with feta and spinach

    chicken drumsticks, deboned
  • STUFFING
  • 500
    g
    spinach leaves, blanched
  • 200
    g
    feta or ricotta cheese
  • freshly ground black pepper
  • 100
    g
    dukkah
 

Method

 
Preheat oven to 180 °C.
Place half a teaspoon of cheese on half of a spinach leaf and wrap neatly - cheese must be totally covered.
Stuff this into the drumstick and place bottom down on roasting tin.
Season and sprinkle with dukkah.
Roast in the oven until cooked and crispy.
You can also pop them on the braai to cook.
