Chicken curry au lait de coco

    chicken pieces
  • salt and milled black pepper
  • 30
    ml
    butter
  • 30
    ml
    sunflower oil
  • 2
    onions, finely chopped
  • 15
    ml
    turmeric
  • 15
    ml
    mild curry powder
  • 15
    ml
    chopped garlic
  • 15
    ml
    chopped ginger
  • 2
    green chillies
  • curry leaves or cinnamon leaves
  • 150
    ml
    coconut cream
 

Method

 
Season chicken lightly with salt and pepper. Heat butter and oil in a large saucepan or sauté pan and fry chicken all over until browned; just a few minutes on each side. Remove chicken, then wipe out pan with paper towels. Add a little butter to pan, stir in onions, turmeric, curry powder, garlic, ginger and chillies. Heat through. Return chicken to pan, add curry leaves and coconut cream. Cover and cook gently for 20 to 30 minutes, or until tender, turning occasionally. Serve with rice and fresh fruit and vegetable chutneys.
