Chicken curry

    oil

    onion, finely chopped

    garlic cloves, crushed

    curry powder

    cumin
  • 5

    ground coriander
  • 5
    ml
    ground ginger

    g
    chicken breast fillets, cut into strips
  • 410
    g
    tomato and onion mix (canned)
  • 15
    ml
    tomato paste (or double this amount if desired)
  • 5
    ml
    garam masala (or double this amount if desired)
  • 180
    ml
    plain yoghurt
  • 125
    ml
    cream
  • 5
    ml
    chopped fresh coriander (or double this amount if desired)
  • salt and pepper
 

Method

 
Heat the oil in a large pan and sauté the onion and garlic until just soft.
Add the curry powder, cumin, ground coriander and ginger and sauté for a minute.
Add the chicken and stir-fry until just done.
Add the tomato and onion mix and tomato paste and bring to the boil.
Reduce the heat and simmer for 10 minutes.
Stir in the remaining ingredients and season with salt and pepper.
Heat without allowing the mixture to come to the boil.
Serve with rice and poppadoms.
