Ingredients (8)

6.00 chicken breast fillets
sea salt and freshly ground black pepper
6.00 ham — cooked, sliced
12.00 colchester cheese — slices
1.00 eggs — beaten
30.00 ml milk
190.00 ml breadcrumbs — dried
65.00 ml oil

Method:

Season chicken with salt and pepper and make a slit on the side of each fillet.
Place one slice of ham and two slices of cheese in each slit and secure with a toothpick.
Dip chicken fillets in the beaten egg and coat them in the breadcrumbs. Refrigerate for one hour.
Heat oil in a frying pan and fry chicken fillets for 10 to 15 minutes on either side, or until crisp, golden, and cooked through.
Serve with fried chips or baked potatoes and a salad.
