Chicken casserole with olives, anchovies and tomatoes

    chicken drumsticks
  • 6
    chicken thighs
  • 1
    cup
    black, pitted olives
  • 6
    anchovies
  • 2
    tins of tomatoes
  • 6
    cloves
    garlic
  • Seasoning
  • 1
    Tbs
    origanum
  • 1
    Tbs
    thyme
  • 1
    small bunch of basil
  • 500
    ml
    red wine
 

Method

Preheat the oven to 180 C.
Place the flour on a plate and season with salt and pepper.
Dredge the chicken in the flour and pat well.
Brown the chicken pieces in a pot until brown and set aside into your casserole dish.
In the same pot, add the garlic, olives, and anchovies and sauté for a few minutes, add the tomatoes, herbs and the wine and simmer for 10 minutes.
Pour the wine mixture over the chicken and cover with the lid.
Place in the oven for 1 1/2 hrs.
