Chicken, broccoli and tomato pasta

  • 400
    g
    pasta
  • 30
    ml
    oil
  • 4
    chicken breast fillets, cubed
  • 300
    ml
    chicken stock
  • 80
    ml
    soya sauce
  • 25
    ml
    cornflour
  • 450
    g
    broccoli florets
  • 200
    g
    baby tomatoes
 

Method

20 mins
 
Cook pasta according to packet instructions until al dente.
Heat oil in a pan and sauté chicken in batches over high heat until browned.
Return chicken to the pan and add the stock, soya sauce and cornflour. Bring to the boil while stirring.
Reduce heat and simmer for five minutes.
Add the broccoli and baby tomatoes and simmer until just tender.
Add to the drained pasta and toss well.
Season to taste and serve hot.
