Chicken breasts wrapped in Parma ham

8.00 chicken breast fillets
16.00 parma ham — Black Forst ham or peppered ham, sliced
16.00 fresh sage
fresh chillies — 573
freshly ground black pepper

Method:

Wipe chicken breasts with a damp cloth. Carefully wrap 2 (overlapping) slices of ham around each breast. They will stick to the chicken quite easily and will not need securing.
Pop 2 sage leaves under the ham, brush with oil and season with pepper to taste.
Preheat the grill and grill chicken breast for about 3 to 4 minutes on each side, or until cooked and nicely browned.
Serve with boiled or oven-roasted baby potatoes and a green salad.
