Chicken breasts with curried fruit mayonnaise

    each ground cumin and coriander
  • salt to taste
  • MAYONNAISE

    sunflower oil

    small onion, chopped

    medium curry powder

    chutney

    raisins

    apricot or orange juice

    good-quality mayonnaise

    thick natural yoghurt
 

Method

 
MAYONNAISE: Heat oil in a frying pan. Sauté onion for 1 minute. Add curry powder, cumin and coriander and sauté for about 3 minutes. As mixture begins to clump together, slowly stir in chutney, raisins and juice. Cook for 1 to 2 minutes. Cool slightly. Stir into mayonnaise and yoghurt and set aside. Heat butter and oil in pan. Coat chicken in spices and season with salt. Fry until cooked through, about 3 minutes on each side. Serve hot with fruit mayonnaise and a mixed salad. TOTAL KILOJOULE COUNT: 9 160 kJ (2 190 Cal). A portion: 2 290 kJ (550 Cal).
