Season the Chicken with salt, pepper and chicken spice.

Marinade the chicken in this mixture for half an hour.

Place the chicken, with the marinade in an oven
roasting dish, cover with a lid, and roast for 45 minutes.
Remove from the oven and increase the oven temperature to 220.
Drizzle the chicken with the honey and return to the oven, open, for another 20 minutes, until the chicken is browned.
Mix the mayonnaise with the basil pesto and spoon over the chicken pieces.
Top with some crumbed feta (optional).
