Chicken breast with pesto mayonnaise

    chicken breasts (fillets or with the skin and bone)
  • Salt, black pepper and chicken spice
  • 80
    ml
    olive oil
  • 80
    ml
    balsamic vinegar
  • 80
    ml
    soya sauce
  • 80
    ml
    lemon juice
  • 60
    ml
    honey
  • 180
    ml
    mayonnaise
  • 45
    ml
    basil pesto
  • Feta cheese (optional)
 

Method

Season the Chicken with salt, pepper and chicken spice.
Mix the olive oil, balsamic vinegar, soya sauce and lemon juice together.
Marinade the chicken in this mixture for half an hour.
Pre-heat the oven to 180.
Place the chicken, with the marinade in an oven roasting dish, cover with a lid, and roast for 45 minutes.
Remove from the oven and increase the oven temperature to 220.
Drizzle the chicken with the honey and return to the oven, open, for another 20 minutes, until the chicken is browned.
Mix the mayonnaise with the basil pesto and spoon over the chicken pieces.
Top with some crumbed feta (optional).
