Ingredients (13)

1.00 lettuce — mixed salad leaves
1.00 rocket
250.00 ml chicken — cooked, sliced
3.00 celery stalks — sliced
2.00 pears — sliced
200.00 g blue cheese — crumbled
100.00 g cherry tomatoes — halved
125.00 ml walnuts — toasted
SPARKLING WINE VINAIGRETTE
30.00 ml Dijon mustard
30.00 ml raspberry vinegar
200.00 ml wine — sparkling
100.00 ml oil
sea salt and freshly ground black pepper

Method:

1. Toss all salad ingredients together.
2. Just before serving, prepare the vinaigrette: Mix the mustard and vinegar to form a smooth paste. Whisk in the sparkling wine. Gradually whisk in the oil. Season with salt and freshly ground black pepper.
3. Drizzle over the salad, toss to coat ingredients and serve.
