Chicken, blue cheese and walnut salad

    bag rocket
  • 250
    ml
    sliced cooked chicken
  • 3
    sticks celery, sliced
  • 2
    fresh pears, sliced
  • 200

    blue cheese, broken into bite-sized bits
  • 100

    cherry tomatoes, halved
  • 125
    ml
    walnuts, toasted
  • SPARKLING WINE VINAIGRETTE
  • 30
    ml
    Dijon mustard
  • 30
    ml
    raspberry vinegar (or grape)
  • 200
    ml
    sparkling wine
  • 100
    ml
    oil
  • salt and freshly ground black pepper
 

Method

 
1. Toss all salad ingredients together. 2. Just before serving, prepare the vinaigrette: Mix the mustard and vinegar to form a smooth paste. Whisk in the sparkling wine. Gradually whisk in the oil. Season with salt and freshly ground black pepper. 3. Drizzle over the salad, toss to coat ingredients and serve.
