Heat the olive oil in a non stick pan and grill the chicken breasts until done, and brown. Season. Put them aside.
Boil the chunks of potatoes until just soft. Drain and set aside.
Mix the mayonnaise, mustard, lemon juice and salt & pepper in a mixing bowl.
To serve, arrange fresh rocket at the bottom of a salad plate. Cut the chicken in pieces, and add it to the mayonnaise mixture, with the cooked potatoes. Carefully mix it through.
Add the chicken and potato on the rocket, sprinkle with fresh chives and serve with lemon wedges.
