Chicken and mixed pepper stir-fry

    olive oil
  • 2
    cloves garlic, finely chopped
  • 1
    piece of fresh root ginger, peeled and finely chopped

    chicken breast fillets, cut into strips
  • 1
    red pepper, seeded and sliced
  • 1
    yellow pepper, seeded and sliced
  • 1
    green pepper, seeded and sliced
  • 2
    courgettes, thinly sliced diagonally
  • 1
    leek, thinly sliced
  • 150
    g
    mangetout
  • 5
    ml
    Chinese five spice powder (or more to taste)
  • 30
    ml
    dry sherry
  • 15
    ml
    light soy sauce
  • salt and pepper
  • sesame seeds, to garnish
 

Method

8-10 minutes
 
1. Heat oil in a wok or large frying pan. Add garlic and ginger and stir-fry over high heat for 30 seconds. 2. Add chicken and stir-fry for one to two minutes, until lightly browned. Add peppers, courgettes, leek and mangetout, and stir-fry for a further two to three minutes. 3. Add five spice powder, sherry, soy sauce and salt and pepper to taste. Stir-fry for another three to four minutes until chicken and vegetables are cooked and tender. 4. Sprinkle with sesame seeds and serve with rice noodles.
