    cooked chicken breast fillets, shredded with a fork
  • 410

    canned mangoes, drained
  • 45
    ml
    chopped fresh coriander
  • extra fresh coriander to garnish
  • DRESSING
  • 45
    ml
    fish sauce
  • 45
    ml
    lime juice
  • 15
    ml
    soft brown sugar
  • 1
    red chilli, seeded and finely chopped
  • 30
    ml
    toasted coconut (optional)
 

Method

 
Combine the chicken, mangoes and chopped coriander.
Blend the ingredients for the dressing and pour over the chicken mixture.
Mix and garnish with fresh coriander.
