Chicken and haloumi skewers

Ingredients

  • 8
    boneless chicken thighs, cut in half
  • 50
    ml
    olive oil
  • 50
    ml
    lemon juice
  • 1/2
    tsp
    paprika
  • 2
    tsp
    dried parsley
  • 200-300
    g
    haloumi, cut into chunks
  • salt and pepper to taste
  • Tzatziki:
  • 500
    g
    fat free yoghurt
  • half
    cucumber, deseeded and finely chopped or grated
  • 2
    cloves
    garlic, crushed
  • 1
    Tbs
    lemon juice
  • salt and pepper, to taste
  • To serve:
  • 4
    flatbreads, warmed
  • half
    cucumber, sliced in ribbons
 

Method

Combine all the marinade ingredients and marinade the chicken.
While you wait, make the tzatziki by combining all the tzatziki ingredients. Make the cucumber ribbons.
Heat a griddle pan until very hot. On another plate heat a large pan.
Fry the chicken in the pan in a tiny bit of oil until golden and cooked through. You can also grill them if preferred. Set aside.
Brush the haloumi chunks with some olive oil. Grill the haloumi until softened but still firm.
Skewer the haloumi with the chicken.
Serve with the skewers, flatbreads and cucumber ribbons with the tzatziki.
