Chicken and feta cheese stir-fry

  • oil for frying

    chicken breast fillets- cut into strips
  • salt and freshly ground black pepper
  • 1
    large onion- finely chopped
  • 250
    fresh button mushrooms- sliced
  • 300
    fresh spinach- stems removed and shredded
  • 2.5
    ground cumin
  • 2
    feta cheese wheels- crumbled
  • cooked penne pasta- for serving


Heat a little oil in a pan. Season the chicken strips lightly with salt and pepper and sear them until just done.
Remove from the pan.

Sauté the onion in the same pan. Add the mushrooms and stir-fry on high heat . Add the spinach and toss frequently.

Add the chicken, season with salt, pepper and cumin and add the crumbled feta cheese.

Stir-fry until the feta just begins to melt. Remove from the heat.

Serve with the pasta.
