Chicken and asparagus baked pasta

    pasta spirals

    fresh green asparagus

    button mushrooms, halved
  • 6
    chicken breast fillets, cut into small cubes

    cream of chicken soup
  • 125
    ml
    cream (or milk)
  • 125
    ml
    grated mature Cheddar cheese
  • 30
    ml
    grated Parmesan cheese
 

Method

35 minutes
 
Cook pasta in boiling water until al dente. Meanwhile, heat butter in a saucepan over medium heat and stir-fry asparagus (cut into 3 cm pieces) and mushrooms for 2 minutes. Remove and set aside. Increase heat to high and stir-fry for 2 minutes. Add canned soup, cream and seasoning to taste. Bring to the boil and simmer for 2 minutes. Stir in the vegetables. Place cooked and drained pasta in a greased ovenproof dish and pour sauce over. Toss to coat pasta. Sprinkle with cheese and bake in a 200 ºC preheated oven for 30 minutes. Serve with salad and crusty bread.
