Chicken and asparagus bake

    cooked chicken, finely sliced

    cooked peas

    grated Cheddar cheese
 

Method

Preheat the oven to 180 ºC (350 ºF). Spray a large ovenproof dish with non-stick spray. Cook the macaroni in sufficient boiling salted water until soft. Drain well and set aside. Sauté the onion in the butter until glossy. Add the cake flour and stir until smooth. Drain the asparagus and add the asparagus liquid to the flour mixture. Stir until smooth. Add the milk powder, chicken stock and milk. Heat until the mixture comes to the boil and thickens. Stir continuously. Season with salt and pepper to taste. Remove from the heat and add the chicken, peas and half the cheese. Add the macaroni and turn into the prepared oven dish. Sprinkle with the remaining cheese and bake for 20-30 minutes or until heated through and the cheese has melted. Serve with a salad. Serves 6-8.
