Chicken and apricot pilaf

Ingredients (12)

4 chicken breast fillets — cubed
2 onion — finely chopped
3 garlic — cloves, crushed
1 Tbs turmeric
1 Tbs coriander — ground
2 tsp cumin — ground
2 tsp paprika
1 Tbs garam masala
2 cup rice — basmati or jasmine
100 g apricots — dried, finely chopped
4 cup stock — chicken
almonds — flaked, chopped

Method:

In a large saucepan, fry the chicken and onions until the chicken
starts to brown.
Add the garlic and sauté for another 2-3 minutes.
Add the spices and stir to combine.
Add the rice and apricots and stir to coat the rice in the spices.
Add the chicken stock and turn down the heat.
Allow to simmer gently
for 10-15 minutes until there is only a little bit of stock left in the
pot and the rice is almost cooked.
Turn the heat off and place a lid on the pot. Allow to steam for 15-20 minutes until the rice is cooked.
Serve with a scattering of almonds and fresh parsley.
