Chicken and apricot pilaf

Ingredients

    large chicken breasts, cubed
  • 2
    onions, finely chopped
  • 3
    garlic cloves, crushed
  • 1
    Tbs
    turmeric
  • 1
    Tbs
    ground coriander
  • 2
    tsp
    ground cumin
  • 2
    tsp
    paprika
  • 1
    Tbs
    garam masala
  • 2
    cup
    basmati/jasmine rice
  • 100
    g
    dried apricots, finely chopped
  • 4
    cup
    chicken stock
  • Flaked almonds and fresh parsley to serve
 

Method

40 mins
 
In a large saucepan, fry the chicken and onions until the chicken starts to brown.
Add the garlic and sauté for another 2-3 minutes.
Add the spices and stir to combine.
Add the rice and apricots and stir to coat the rice in the spices.
Add the chicken stock and turn down the heat.
Allow to simmer gently for 10-15 minutes until there is only a little bit of stock left in the pot and the rice is almost cooked.
Turn the heat off and place a lid on the pot. Allow to steam for 15-20 minutes until the rice is cooked.
Serve with a scattering of almonds and fresh parsley.
