Chicken and apple meatballs

Ingredients

  • 1
    onion, finely chopped
  • 15

    flour for dusting
  • 15
    ml
    boiling water
  • 5
    pinch
    salt
  • 15
    ml
    oil for shallow-frying
  • 1
    cube chicken stock dissolved
  • 1
    large granny smith apple, peeled and grated
  • 5
    ml
    chopped fresh thyme or 2 ml dried thyme
  • 160
    ml
    (50 g) fresh white breadcrumbs
  • 5
    ml
    chopped fresh parsley
  • 2
    chicken breasts, cut into pieces
  • 5
    pinch
    freshly ground black pepper
 

Method

Squueze the grated apple with your hands to remove the excess liquid.

Place the apple, chicken, onion, herbs, breadcrumbs and stock cube in a food pro-cessor and process for a few seconds.

Season with salt and pepper to taste.

Using your hands, shape the mixture into 20 balls and roll them in flour.

Shallow-fry the meatballs for about 10 minutes in a little oil until done.
