Chicken and apple bake

    chicken pieces, excess skin and fat removed
  • salt and freshly ground black pepper

    oil
  • onion, finely chopped

    cake flour
  • 1
    apple, cored and thickly sliced
  • 300

    heated chicken stock (use half a stock cube)
  • 15

    wholegrain mustard
  • 15

    cornflour
  • 150
    ml
    sour cream
  • salt and freshly ground black pepper
 

Method

Preheat the oven to 180 ºC and lightly butter a casserole. Heat a fairly large saucepan and brown the chicken pieces, skin side facing down. Remove from the saucepan and set aside. Add the oil to the chicken fat and fry the onion until tender. Sprinkle with cake flour, stir and add the chicken pieces, apple slices, stock and mustard. Stir and bring to the boil. Blend the cornflour with a little sour cream to form a paste and add to the chicken along with the remaining sour cream. Season and transfer to the casserole. Cover and bake for 1 hour until the chicken is tender. Serve hot with white rice and vegetables. Serves 4-6.
