Chicken à la king

    x 1,2 to 1,5 kg chicken
  • salt and freshly ground black pepper
  • 30
    ml
    butter
  • 5
    ml
    sunflower oil
  • 4
    garlic cloves
  • 2
    baby leeks
  • 250
    g
    brown mushrooms
  • 250
    ml
    white wine
  • 250
    ml
    cream
  • 6
    sprigs marjoram
 

Method

 
Preheat the oven to 180 °C.
Place the chicken in a roasting pan and season well.
Roast for one hour.
Cool and remove all the meat from the carcass.
Heat the butter and oil in a large frying pan.
Crush the garlic and chop the leeks finely and cook for one minute.
Add the mushrooms and cook for another minute.
Add the wine, cream and marjoram and reduce, uncovered, over low heat for three minutes.
Add the chicken pieces and check seasoning.
Serve with creamy mashed potatoes and peas cooked with fresh mint.
