Return all the chicken to the wok or pan, add the sugar, soy sauce, sweet chilli sauce, fish sauce and lime juice and stir-fry until the sauce thickens slightly.
Add the spring onions and sprouts and stir-fry until heated through. Sprinkle the coriander on top just before serving with rice noodles.
