    spring onions, thinly sliced
  • 4
    chicken breast fillets, cut into strips
  • 60
    ml
    sweet chilli sauce
  • 30
    ml
    soy sauce
  • 2
    red chillies, seeded and thinly sliced
  • 15
    ml
    lime juice
  • 10
    ml
    soft brown sugar
  • 250
    ml
    bean sprouts
  • 1
    garlic clove, crushed
  • 15
    ml
    fish sauce
  • 60
    ml
    fresh coriander, roughly chopped
  • 5
    ml
    grated fresh ginger
 

Method

30 mins
 
Mix the chicken, garlic, ginger and chillies. Heat a wok or large nonstick pan and stir-fry the chicken mixture in batches until the chicken is just golden brown.

Return all the chicken to the wok or pan, add the sugar, soy sauce, sweet chilli sauce, fish sauce and lime juice and stir-fry until the sauce thickens slightly.

Add the spring onions and sprouts and stir-fry until heated through. Sprinkle the coriander on top just before serving with rice noodles.
