Ingredients (10)

45.00 ml oil
1.00 onion — small, sliced
4.00 lamb rib — thick, deboned,cut in large cubes
8.00 chicken — drumsticks
1.00 garlic — cloves, crushed
80.00 ml fresh parsley — chopped
250.00 ml stock — chicken
10.00 ml dried marjoram
410.00 g tomatoes — crushed
sea salt and freshly ground black pepper

Method:

Heat oil in a large, heavy-based pan and sauté onion and bacon over medium heat for 5 minutes.
Increase heat and add chicken in batches. Brown chicken on all sides, turning often and taking care not to overcook the onion and bacon, for about 5 minutes.
Reduce heat, add garlic and parsley and cook for 2 to 3 minutes.
Add stock and marjoram stirring to incorporate any bits which may be sticking to the pan base.
Add tomatoes, season and stir.
Bring to the boil, cover and simmer gently for 30 minutes, turning chicken occasionally, until cooked through.
Serve on rice.
