    bunch spring onions, washed and thinly sliced (including green part)

    cloves garlic, finely chopped

    chicken livers

    sausage meat

    chestnuts, drained and halved

    cranberry jelly

    walnuts, roughly chopped

    chopped rosemary and sage
  • 200

    fresh breadcrumbs

    extra-large or jumbo eggs
  • salt and milled black pepper
 

Method

 
Heat butter and oil in a frying pan. Sauté spring onions and garlic until soft, about 5 minutes. Add chicken livers and sear. Remove from heat. Mix in remaining ingredients. Season well. Makes enough to stuff 1 turkey.
