    golden syrup

    sweetened Nestlé condensed milk

    light brown sugar

    walnut halves

    glacé cherries

    vanilla essence
 

Method

 
Line a 22 x 33 x 4 cm baking tray with baking paper. Grease bottom and sides with butter. Cream the butter and sugar. Add the caramel essence and beat until incorporated. Sift the flour, baking powder and cocoa together and mix into the creamed mixture. Press into the lined tray and bake in preheated 160 ºC oven for 10 minutes. CHERRY TOPPING: Heat the butter, syrup, condensed milk and sugar together over medium heat to dissolve the sugar, stirring well to prevent scorching. Cook the mixture for 10 minutes. Stir in the nuts, cherries and vanilla essence. Spread the topping over the prebaked base and bake for a further 15 to 20 minutes.
