    soft butter or margarine

    cake flour

    baking powder

    red glacé cherries, halved

    extra-large egg, whisked

    vanilla essence
  • 125
    ml
    water
  • 225
    g
    Nestlé condensed milk
 

Method

 
Preheat the oven to 180 ºC and butter a 26 x 10 cm loaf tin or spray with non-stick spray. Line with baking paper and butter or spray again. Cream the butter until light and fluffy. Sift the dry ingredients together and add the cherries. Add to the butter mixture, along with the remaining ingredients, and mix well. Turn the batter into the prepared loaf tin and bake for about 50-60 minutes or until golden brown and done. Allow to cool slightly in the tin before turning out onto a wire rack to cool completely. Makes 1 medium-sized loaf.
