Cherry cookies

    cornflour
  • 240
    g
    cake flour
  • 2
    ml
    salt
  • 140
    g
    castor sugar
  • 250
    g
    soft butter
  • a little milk, if necessary
  • coconut for rolling in (optional)
  • glacé cherries, halved
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray a baking sheet with nonstick spray. Place the cornflour, flour, salt, sugar and butter in the bowl of a food processor and, using the plastic blade, blend well. Add a little milk if the mixture is too stiff. Remove the dough from the food processor and roll into small balls. Coat with coconut, if desired. Flatten slightly with a fork and place half a glacé cherry on top of each cookie. Bake for 15 minutes or until cooked through and pale brown. Makes 25-30 cookies.
