Chermoula chicken and apricot kebabs

  • 4
    large chicken breast fillets
  • 16
    soft dried apricots
  • 60
    ml
    readymade chermoula paste
  • fresh coriander, to serve
  • coriander yoghurt sauce, to serve
 

Method

 
Cut each chicken breast into 4 cubes.
Thread chicken and apricots alternately on 8 skewers.
Brush with chermoula paste and grill or braai until cooked to your liking.
Serve 2 skewers a person, with a warm roti, fresh coriander and a dollop of coriander yoghurt sauce.To make coriander yoghurt sauce, mix together a little readymade coriander paste and natural yoghurt.
Chill until needed.
