6.00 potatoes
oil
sea salt
cream — or mayonnaise
butter
1.00 tomato and onion mix — tinned
oregano
salt and freshly ground black pepper
300.00 g cheese — grated

Method:

Preheat the oven to 180 ºC (350 ºF). Coat the potatoes with oil and sprinkle with salt. Bake for about 1 hour or until soft, or boil the potatoes in a little water until soft. Cut each potato in half and arrange in a layer in a prepared dish. Place a dollop of cream or mayonnaise on each half, working it into the potato with a fork. Dot with knobs of butter and spoon the tomato and onion mix on top. Season with origanum and salt and pepper to taste. Sprinkle with cheese and place under the grill until the cheese has melted.
Serves 6.
