50.00 g butter — melted
150.00 g rusks — buttermilk, crushed
100.00 g chocolate — bitter, melted
600.00 g cottage cheese — smooth
250.00 ml cream — fresh, whipped
100.00 g sugar
20.00 g flour — cake
2.00 orange — oil
5.00 ml vanilla — essence
6.00 eggs — seperated

Method:

Butter and flour a 24 cm diameter springform pan. Cover base with mixed butter and rusks. Drizzle chocolate over.
Mix cottage cheese, whipped cream, sugar, flour, orange oil and vanilla essence. Add egg yolks one by one, beating well after each addition. Whisk egg whites until stiff but not dry and fold in gently but thoroughly. Spoon cheese mixture into pan, smooth top with a spatula.
Bake at 160 ºC for 1 1/4 hours. Turn off stove, open oven door and allow cake to cool in oven.
Sprinkle edges with icing sugar. Remove from pan and decorate with well-drained kumquats. Refrigerate and serve with cream.
