Cheese truffles

  • 150
    g
    soft butter
  • 250
    g
    cream cheese
  • 3
    packets savoury biscuits, coarsely crushed
  • 50
    g
    cashew or walnuts, chopped
  • 6
    black olives, stoned and coarsely chopped
  • 6
    sun-dried tomatoes in oil, drained and coarsely chopped
  • toasted sesame seeds
  • toasted poppy seeds
  • finely chopped parsley
 

Method

 
Ensure the butter and cream cheese are equally soft. Combine the two, mixing well. Fold the biscuits, nuts, olives and sun-dried tomatoes into the mixture. Spoon the mixture into a flat dish and chill until firm. Cut into squares and roll each square into a ball. Roll the balls in the sesame seeds and then in the poppy seeds and chopped parsley. Chill until firm. Serve with a selection of other cheeses and Melba toast, if desired. Makes about 30 truffles.
