Ingredients (10)

10.00 g Superbake Instant Yeast
5.00 ml sugar
250.00 ml milk — lukewarm
625.00 ml flour — plain
5.00 ml salt
15.00 ml fresh chillies — 573
12.00 olives — black pitted
375.00 ml gruyère cheese
12.00 fresh thyme
0.00 olive oil — extra virgin, to serve

Method:

Preheat the oven to 180 &degC.
Place the yeast, sugar and milk in a bowl and mix to combine.
Set aside in a warm place for five minutes or until bubbles appear on the surface.
Place the flour, salt, oil and yeast mixture in a bowl and mix until a smooth dough is formed.
Knead for five minutes or until smooth and elastic.
Prove until doubled in size, knock back and then shape into a large baking tray.
Press olives into the top of the bread and sprinkle with cheese and thyme.
Leave to rise again and bake for 35 minutes.
Serve with extra virgin olive oil to drizzle over.
