  • 500
    g
    Cheddar cheese, grated
  • 50
    ml
    cream
  • 125
    ml
    butler
  • 150
    ml
    sherry
  • salt and freshly ground black pepper
  • pinch cayenne pepper
  • 5
    ml
    wholegrain mustard
 

Method

 
Slowly heat the cheese, cream and butter until the cheese has just melted. Turn into the food processor and add small quantities of the sherry while the food processor is running. Add all the seasonings and mustard. Chill until needed. Makes about 750 ml.
